How much meat do you get back from a deer? On average you will get back between 20 and 35 pounds of boneless primal cuts of meat, for a New Jersey deer.

    I have also had deer with 40 and 50 pounds of boneless meat back,  a well feed, big, meat deer. On the same subject people bring deer that are lucky to get 10-14 pounds back. A faun or slightly bigger.

               Here are some facts about meat yield: A deer is closer to the size of a lamb,  deer fat has a bad taste it must be trimmed off, EVEN FOR THE CHOP MEAT. Wounded areas must be discarded.

    Have you ever seen a lamb chop? Or lamb leg? If not, is a small animal.

    Some places in the world eat everything, I think you know what i mean. If this was the case, there would be no waste. For instance, The Indians used everything, in a deer.

             The horror stories I have heard when customers get "other butchers or other peoples cuts of meat" are:

    When opening packages there's hair in it! or, its not cut right,  no refrigeration in some places! they do not, or, can not clean properly, there's no drains, no sinks? Do they spend any money on soap and bleach? Is the cleaning water 140 degrees?

    Other processors swap your deer for another. We do not and I CANT see how this is legal?

    Your deer has a tag number, that is your property, with your name as legal owner. Same for every deer.     I wouldn't want someone else's deer you want the deer you shot! That is why we keep each deer with your name and tag on it through out the entire process, we will gladly account for every deer in our facility. This has been our policy since we have been cutting deer.

    I have been in the meat business for 26 years. I have been a journeyman meat cutter in the union. I am proud to say, I have worked at the finest gourmet counters setting them up and maintaining them. I have also worked in a slaughter house when I was younger.

          We are legitimate deer processing facility, and check station, we do the Hunters helping the hungry program, and would like people to feel that old fashion "go to the butcher" for meats type of  place. "Mom and Pop" WITH PERSONNEL CARE.
